Asparagus Ingredients
2 tsp olive oil
Salt and pepper to taste
18 pieces jumbo asparagus
½ cup thinly shaved radishes
¼ cup thinly shaved spring onions
1 batch hummus vinaigrette (recipe below)
1 tsp Aleppo pepper
1 tsp black sesame seeds
1½ cups sunflower greens
2 tbsp EVOO
½ cup crispy chickpeas (optional)
Asparagus Technique
- Preheat grill
- Season Asparagus with salt, pepper and EVOO to taste
- Grill for approx. 4-5 minutes turning a couple times to char around entire spear, remove from grill and keep warm.
- Spread the vinaigrette in a circle on a plate
- Place three pieces of grilled asparagus in circle
- Sprinkle with a pinch of Aleppo and black sesame
- Garnish with slices of radish, spring onions, and sunflower greens
- Drizzle EVOO over the plate and sprinkle with crispy chickpeas
Hummus Vinaigrette Ingredients
1 cup of hummus (your favorite brand)
1 Tablespoon + 2 teaspoons of golden balsamic vinegar
2 Tablespoons of lemon juice
2 Tablespoons of rice vinegar
¼ cup + 2 Tablespoons of EVOO
1 clove of garlic (microplaned)
Hummus Vinaigrette Technique
- Add garlic, hummus, vinegars and lemon juice to a mixing bowl
- Stir until mixed
- Whisk in evoo
- Salt to taste
